Gluten -free Cole Slaw

As a certified gluten sensitivity doctor, I like to share recipes to show that foods can be enjoyed which are devoid of gluten and gluten like substances.... most of all, it's healthy and tastes great!
This recipe comes from the Gluten Free Society is an excellent side that can be accompanied with almost anything.  Cabbage is loaded with nutrients including magnesium, potassium vitamin C, vitamin K & vitamin B6.  It is also a great source of fiber, helps promote bacterial balance in the gut. The carrots and peppers provide an excellent source of antioxidants.  The ingredients can be substituted with any of your favorite vegetables as well. It has a great taste and takes few minutes to make.

Ingredients:
  • Cabbage
  • Carrot
  • Bell Pepper: Green, Red, Yellow
  • Apple
  • Balsamic Vinaigrette: Garlic, Ginger, Onion, Olive Oil, Balsamic Vinegar, Salt, Pepper
  • Celery
Instructions: Shred all vegetables and mix with vinaigrette, chill and enjoy!
